<nowiki>The term "Cheddar cheese" is widely used, but has no [[Protected Geographical Status|Protected Designation of Origin]] within the European Union.  However in 2007, a Protected Designation of Origin, "West Country Farmhouse Cheddar", was created and only Cheddar produced from local milk within the four counties of south west England and manufactured using traditional methods may use the name.<ref>[https://www.gov.uk/government/uploads/system/uploads/attachment_data/file/271260/pfn-west-country-farmhouse-cheddar.pdf "West Country Farmhouse Cheddar”], gov.uk.</ref><ref>Brown, Steve; Blackmon, Kate; and Cousins, Paul. ==History==<br>

The cheese originates from the village of <nowiki>[[Cheddar, Somerset|Cheddar]] in [[Somerset]]</nowiki>, south west England. <nowiki>[[Cheddar Gorge]]</nowiki> on the edge of the village contains a number of <nowiki>[[cave]]</nowiki>s, which provided the ideal humidity and steady temperature for maturing the cheese.<nowiki><ref name=indy/></nowiki> Cheddar cheese traditionally had to be made within <nowiki>{{convert|30|mi|km|abbr=on}} of [[Wells Cathedral]].<ref name=curdswhey/></nowiki><br>

Cheddar has been produced since at least the 12th century. A <nowiki>[[pipe rolls|pipe roll]] of [[Henry II of England|King Henry II]]</nowiki> from 1170 records the purchase of <nowiki>{{convert|10240|lb|abbr=on}} at a [[Farthing (British coin)|farthing]]</nowiki> per pound (totalling <nowiki>[[£sd|£10.13s.4d]]).<ref>{{Cite web| title=History| work=Cheddar Gorge Cheese Company | url=http://www.cheddargorgecheeseco.co.uk/acatalog/about-cheddar-gorge.html | accessdate=1 August 2009}}</ref></nowiki><br>

Central to the modernisation and standardisation of Cheddar cheese was the 19th-century Somerset dairyman <nowiki>[[Joseph Harding]].<ref name="History">{{Cite web| title=History of Cheddar Cheese | work=Icons of England | url=http://www.icons.org.uk/theicons/collection/cheddar-cheese/biography/history-of-cheddar-finished | accessdate=9 May 2007}}</ref></nowiki><br>

For his technical innovations, promotion of dairy hygiene, and volunteer dissemination of modern cheese-making techniques, he has been dubbed "the father of Cheddar cheese".<nowiki><ref>{{Cite book|last=Heeley |first=Anne |author2=Mary Vidal |title=Joseph Harding, Cheddar Cheese-Maker |year=1996 |publisher=Friends of the Abbey Barn |location=Glastonbury }}</ref></nowiki><br>

The "Joseph Harding method" was the first modern system for Cheddar production based upon scientific principles. Harding stated that Cheddar cheese is "not made in the field, nor in the <nowiki>[[byre]]</nowiki>, nor even in the cow, it is made in the dairy".<nowiki><ref>{{Cite web|url=http://www.gourmetbritain.com/encyclo_entry.php?item=2391 |title=Encyclopedia – Harding, Joseph |publisher=Gourmet Britain |accessdate=23 June 2009}}</ref></nowiki> His wife and he were behind the introduction of the cheese into Scotland and North America. During the <nowiki>[[Second World War]]</nowiki>, and for nearly a decade after, most milk in Britain was used for the making of one single kind of cheese nicknamed "government Cheddar" as part of war economies and <nowiki>[[Rationing in the United Kingdom|rationing]].<ref>{{Cite web| url=http://www.cooksinfo.com/government-cheddar-cheese |title=Government Cheddar Cheese |publisher= Practically Edible |accessdate=30 April 2011}}</ref></nowiki> This almost resulted in wiping out all other cheese production in the country. <nowiki>The ideal quality of the original Somerset Cheddar was described by Joseph Harding in 1864 as "close and firm in texture, yet mellow in character or quality; it is rich with a tendency to melt in the mouth, the flavour full and fine, approaching to that of a hazelnut".<ref>''Transactions of the New-York State Agricultural Society for the Year 1864'', page 232, volume 14 1865, Albany</ref></nowiki><br>

Cheddar made in the classical way tends to have a sharp, pungent flavour, often slightly earthy. Its texture is firm, with farmhouse traditional Cheddar being slightly crumbly; it should also, if mature, contain large <nowiki>[[cheese crystals]]</nowiki> consisting of <nowiki>[[calcium lactate]]&</nowiki>nbsp;– often precipitated when matured for times longer than six months.<nowiki><ref name="Phadungath">{{Cite thesis | last= Phadungath | first = Chanokphat| title = The Efficacy of Sodium Gluconate as a Calcium Lactate Crystal Inhibitor in Cheddar Cheese | type = |chapter = | url = http://purl.umn.edu/116278 | year = 2011 | publisher = University of Minnesota | accessdate = 12 October 2013}}</ref></nowiki><br>

Cheddar can be a deep to pale yellow (off-white) colour, or a yellow-orange colour when certain plant extracts are added. One commonly used spice is <nowiki>[[annatto]]</nowiki>, extracted from seeds of the tropical <nowiki>[[Achiote|achiote tree]]</nowiki>. Originally added to simulate the colour of high-quality milk from grass-fed <nowiki>[[Jersey cattle|Jersey]] and [[Guernsey cattle|Guernsey]] cows,<ref>{{cite news |url=http://www.npr.org/sections/thesalt/2013/11/07/243733126/how-17th-century-fraud-gave-rise-to-bright-orange-cheese |first=Allison |last=Aubrey |title=How 17th Century Fraud Gave Rise To Bright Orange Cheese |work=The Salt |publisher=NPR |date=November 7, 2013}}</ref></nowiki> annatto may also impart a sweet, nutty flavour. The largest producer of Cheddar cheese in the United States, <nowiki>[[Kraft Foods|Kraft]]</nowiki>, uses a combination of annatto and oleoresin paprika, an extract of the lipophilic (oily) portion of <nowiki>[[paprika]].<ref name="df">{{cite book| last = Feldman| first = David| title = When Do Fish Sleep? ==International production==<br>

The Cheddar cheese name is used internationally; its name does not have a PDO, but the use of the name "West Country Farmhouse Cheddar" does. As well as the United Kingdom, countries making Cheddar cheese include Australia, Argentina, Belgium, Canada, Ireland, the Netherlands, New Zealand, South Africa, Sweden, and the United States. Cheddars can be industrial or <nowiki>[[artisan cheese]]</nowiki>s. The flavour, colour, and quality of industrial cheese varies significantly, and food packaging will usually indicate a strength, such as mild, medium, strong, tasty, sharp, extra sharp, mature, old, or vintage; this may indicate the maturation period, or food additives used to enhance the flavour. Artisan varieties develop strong and diverse flavours over time.<br>

<br>

===Australia===<br>

As of 2013, Cheddar accounts for over 55% of the Australian cheese market, with average annual consumption around <nowiki>{{convert|7.5|kg|abbr=on}} per person.<ref>[http://www.dairyaustralia.com.au/~/media/Documents/Stats%20and%20markets/In%20Focus/Australian%20Dairy%20Industry%20In%20Focus%202013.pdf "Australian Dairy Industry"]. dairyaustralia.com.</ref></nowiki>  Cheddar is so ubiquitous that the name is rarely used: instead, Cheddar is sold by strength alone as e.g. "mild", "tasty" or "sharp".<nowiki><ref>{{cite web|url=http://www.begacheese.com.au/products/natural/|title=Natural|publisher=}}</ref></nowiki><br>

===Canada===<br>

Following a wheat midge outbreak in Canada in the mid-19th century, farmers in <nowiki>[[Ontario]]</nowiki> began to convert to <nowiki>[[dairy farming]]</nowiki> in large numbers, and Cheddar cheese became their main exportable product, even being exported to England. By the turn of the 20th century, 1,242 Cheddar factories were in Ontario, and Cheddar had become Canada’s second-largest export after timber.<nowiki><ref name="thewalrus.ca">{{cite web|url=http://thewalrus.ca/manufacturing-taste/|title=Manufacturing Taste|work=thewalrus.ca}}</ref></nowiki> Cheddar exports totalled <nowiki>{{convert|234000000|lbs|abbr=on}}</nowiki> in 1904, but by 2012, Canada was a net importer of cheese. <nowiki>[[James L. Kraft]]</nowiki> grew up on a dairy farm in Ontario, before moving to Chicago. According to the writer Sarah Champman, "Although we cannot wholly lay the decline of cheese craft in Canada at the feet of James Lewis Kraft, it did correspond with the rise of Kraft’s processed cheese empire."<nowiki><ref name="thewalrus.ca"/></nowiki> Most Canadian Cheddar is produced by a number of large companies in Ontario, though other provinces produce some and some smaller artisanal producers exist. The annual production is 120,000 tons.<nowiki><ref>{{cite web|url=http://www.canadianliving.com/food/__all_you_need_is_cheese/types_of_cheddar_cheese.php|title=Types of Cheddar cheese, Canadian Living|work=CanadianLiving.com}}</ref></nowiki> It is aged a minimum of three months, but much of it is held for much longer, up to 10 years.<br>

===New Zealand===<br>

Much of the Cheddar cheese in New Zealand is factory produced. While most of it is sold young within the country, the <nowiki>[[Anchor (brand)|Anchor]]</nowiki> dairy company ships New Zealand Cheddars to the UK, where the blocks mature for another year or so.<nowiki><ref name=Ridgway77/></nowiki><br>

===United Kingdom===<br>

<nowiki>[[File:WestcountryCheddar-Counties.svg|thumb|The four English counties in the PDO]]</nowiki><br>

Only one producer of the cheese is now based in <nowiki>[[Cheddar, Somerset|Cheddar]]</nowiki> itself, the Cheddar Gorge Cheese Co.<nowiki><ref>{{Cite web|url=http://www.cheddargorgecheeseco.co.uk|title=Cheddar Gorge Cheese Company}}</ref></nowiki> The name "cheddar" is not protected by the European Union, though the name "West Country Farmhouse Cheddar" has an EU <nowiki>[[Protected Geographical Status|protected designation of origin]]</nowiki>, and may only be produced in <nowiki>[[Somerset]], [[Devon]], [[Dorset]] and [[Cornwall]]</nowiki>, using milk sourced from those counties.<nowiki><ref name="PDO">{{Cite web| url= http://www.defra.gov.uk/foodrin/industry/regional/foodname/products/registered/westcoun.htm | publisher= [[Department for Environment, Food and Rural Affairs]] | title= EU Protected Food Names Scheme – UK registered names | accessdate= 22 July 2009}}</ref></nowiki> Cheddar is usually sold as mild, medium, mature, extra mature or vintage. ===United States===<br>

<nowiki>[[File:Bravo Cheddar.jpg|left|200px|thumb|Cheddar-style cheese from Bravo Farms, [[Traver, California]]]]</nowiki><br>

<nowiki>The state of [[Wisconsin]] produces the most Cheddar cheese in the US; other centers of production include: [[California]], [[Idaho]], [[upstate New York]], [[Vermont]], [[Oregon]], [[Texas]], and [[Oklahoma]]. It is sold in several varieties (mild, medium, sharp, extra-sharp, New York-style, white-, and Vermont). New York-style Cheddar is particularly "sharp"/acidic, but tends to be somewhat softer than the milder-tasting varieties. Cheddar that does not contain annatto is frequently labelled "white Cheddar" or "Vermont Cheddar" (regardless of whether it was actually produced there). Vermont's three creameries produce what is regarded as first-class Cheddar cheeses: the [[Cabot Creamery]], which produces the 16-month-old "Private Stock Cheddar", the Grafton Village Company, and Shelburne Farms.<ref name="Ridgway77">Ridgway, Judy. ''The Cheese Companion''. Running Press, 2004, p. 77.</ref></nowiki><br>

<br>

Some cheeses called "Cheddar" are actually flavoured <nowiki>[[processed cheese]]</nowiki>s or "cheese foods"; they often bear little resemblance to their natural namesakes. Examples include <nowiki>[[Easy Cheese]]</nowiki>: a cheese-food packaged in a pressurized spray can; also, as packs of square, sliced,  individually wrapped, "processed cheese" (sometimes also pasteurised).<br>

<br>

Cheddar is one of several products used by the <nowiki>[[United States Department of Agriculture]]</nowiki> to track the status of America's overall <nowiki>[[dairy industry]]</nowiki>; reports are issued weekly detailing prices and production quantities.<br>
